Ingredients:

1 x pack of Oddpods Chickpeas
1 cup of Howdah Bombay Mix
1/2 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp Kashmiri chilli powder (or regular chilli powder)
1/4 tsp Garam Masala
1 tsp olive oil
1 small red onion, thinly sliced
1 medium tomato, thinly sliced
1 green finger chilli, thinly sliced
1 lime
1 tbsp vegan yoghurt
1 tsp tamarind paste
Handful fresh coriander

Method:

First we need to get the crispy chickpeas on! Add half your pack of Oddpods chickpeas to a baking tray and sprinkle over the cumin, coriander, chilli powder, garam masala and olive oil and mix to well covered. Pop the tray in an oven on a high heat, for about 10 minutes or until the chickpeas are crispy

Meanwhile, thinly slice your onion and put in a small bowl. Add 1/4 of the lime juice and mix well. This reduces the bitter flavour of the onion and makes the dish more balanced. Then thinly slice your tomato and green chilli. Set to one side

In a small bowl, add 1 tbsp vegan (or regular) yoghurt, 1/4 of the lime juice and 1 tsp water. Mix the yoghurt and add a little more water if you like, until you get a runny consistency. This will be easy to drizzle over your chaat at the end.

For the tamarind chutney, simply combine 1 tsp tamarind paste and 1 tsp water and mix.

In a large bowl add the remainder of the Oddpods chickpeas then 1 x cup of Howdah Bombay Mix. Add your sliced veggies and mix everything together well. Once they are ready, add the crispy chickpeas to your bowl and mix.

Serve up on a plate or bowl, then top with your chutneys (add as much or as little as you like - we like LOTS of sauce 😁) Then add a sprinkle of fresh coriander, a squeeze of the remaining lime and a pinch of chilli powder (if you desire 🌶)

Eat straight away! Enjoy
